Creamy chipotle chicken

this is my new favorite Mexican dish, what's not to love?

  • 3 chicken breast diced into 1 inch cubes
  • 1 can adobo peppers in sauce
  • 2 tsp chicken bullion
  • 1 8oz pkg cream cheese
  • ½ cup sour cream
  • ½ cup water
  • 2 roma tomatos
  • 3 garlic cloves
  • 1 onion diced
  • salt, pepper, garlic powder, adobo seasoning, paprika


  • Clean and cut the chicken then place in a bowl and season with salt ,pepper, garlic, adobo, paprika then mix together
  • Heat 3-4 tbsp of oil in your pan and add the chicken, stir and cover 10 mins mixing as needed every few mins to prevent burning 
  • While the chicken is cooking boil water in a small pot and add the tomatoes and cook for 10 mins or until soft
  • In a blender add the soft tomatoes, cream cheese, sour cream, 2 adobo peppers and a few spoons of the sauce from the can, add the bullion and 1/2 cup of the water for the tomatoes & garlic, blend together well
  • Once the water has evaporated from the chicken add the diced onions and cook for 5-10 mins or until the onions are translucent then add in the cream sauce and cook for 3-5 mins and serve with rice, and a flour tortilla, top with cilantro & enjoy
