Cranberry orange scones

Cranberry orange scones

this is a base scone recipe, meaning you can make pretty much any other scone flavors using this recipe, minus the orange and cranberry

Ingredients
  

  • 2 cups all purpose flour
  • ½ cup sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • ½ cup unsalted butter cold
  • 1 large egg
  • 1 cup heavy cream
  • 2 ½ tbsp orange zest
  • ¾ cup dried cranberries

Instructions
 

  • with this recipe it is important to have the ingredients COLD, combine the dry ingredients (flour, salt, sugar, baking powder) in a bowl, mix to combine and place in the freezer for 20 minutes, along with the butter.
  • after 20 minutes take the ingredients out of the freezer then Grate your butter using a cheese grater and stir into the flour mixture OR cut butter into small pieces and use a pastry cutter to cut the butter into the flour mixture until it resembles coarse meal or sand.
  • Add in egg (if using), 1 cup cream, blueberries, and vanilla extract (or other flavorings) stirring until the dough just comes together. DO NOT OVER MIX, it will look kinda dry, that's ok that is what we want
  • Turn the dough out onto a clean countertop and form it into a ball Press the dough flat until it is 2-inch thick circle. Use a butter knife to cut the circle into 8 wedges.
  • Place cut scones on an un-greased baking sheet (I used parchment paper to line my baking sheet) and brush the tops with 2 tablespoons heavy cream. then I like to sprinkle the tops with baking sugar crystals or turbinado sugar
  • Bake at 425 12-15 mins or until lightly golden on top

ADDITIONAL MIX INS

  • Blueberry Scones (1 cup blueberries + 1 teaspoon vanilla extract)
  • Chocolate Chip Scones (1 cup mini chocolate chips)
  • Cranberry Orange Scones (3/4 cup dried cranberries + 2 ½ tablespoons orange zest)
  • Pumpkin Scones (replace half of the heavy cream with 1/2 cup pumpkin puree + 2 teaspoons pumpkin pie spice)
  • Cranberry Scones (1 cup dried cranberries + 1 teaspoon vanilla extract)
  • Lemon Scones (replace 1/4 cup of the heavy cream with 1/4 cup lemon juice + 2 tablespoons lemon zest)
  • Cinnamon Scones (replace white sugar with brown sugar + 1-2 teaspoons ground cinnamon)
