I LOVE this recipe its one of our favorites its super easy but also kinda fancy at the same time

Chicken marsala

this is a great recipe to have any time week, it remains one of our favorites

Ingredients
  

  • 3 chicken breasts thinly sliced
  • 1 cup marsala wine
  • ¾ cup chicken stock
  • 5 tbsp unsalted butter
  • 1 tbsp flour
  • 5 cloves garlic
  • 1 large shallot
  • 1 handful parsley
  • 1 tub mushrooms sliced
  • 1 tbsp oil
  • 1 tsp sugar

  • salt
  • black pepper
  • garlic powder
  • crushed red pepper
  • 1 dash maggi seasoning sauce for color (optional)

Instructions
 

preparation

  • start by prepping the chicken, clean and trim the chicken accordingly then thinly slice it through the middle then use a mallet to beat it thinner (roughly about ¼ inch thick) , season lightly on both sides and cut each breast in half then set aside
  • add flour to a bowl and season with salt, pepper and garlic powder then mix to combine and set aside
  • finely chop the shallots, garlic, parsley and slice the mushrooms and set aside

cooking directions

  • in a pan on medium heat melt 2 ½ tbsp of butter and about one tbsp of oil, once the butter is melted and the pan is heated, lightly drench the chicken in the flour and add the chicken to the pan then cook for 5-7 minutes on each side then remove the chicken from the pan and place aside.
  • melt another 2½ tbsp of butter in the same pan then add the mushrooms, shallot & garlic and parsley , saute for 5-6 minutes, once it looks browned a bit and softened add one tbsp of flour and continue to sauté for at least 3 minutes
  • then add the marsala wine and allow it to cook for 5-7 minutes or until slightly thick then add the chicken stock & cook for another 3-5 minutes until it begins to thicken up again, season it with all the above seasonings at this point, then add the one tsp sugar and taste for seasoning, adding more if needed, then add the chicken back to the pan with the sauce and cook for an additional 10 minutes, garnish with some chopped parsley and freshly grated parmesan cheese, we like to serve with a creamy pasta on the side
