after trying MANY different recipes this one is the closest I have found to the flavor of the Costco poppyseed muffins, I like to make this in a loaf pan instead of muffins.

Almond poppyseed loaf

Ingredients
  

  • 3 cups all purpose flour
  • 1 ½ tsp salt
  • 1 ½ tsp baking powder
  • 3 tbsp poppy seeds
  • 1 ½ cups whole milk
  • 1 ½ cups vegetable oil
  • 3 large eggs
  • 2 ¼ cups sugar
  • 2 tsp almond extract
  • 1 ½ tsp butter extract
  • 2 tsp vanilla extract
  • cup sliced almonds for the top optional

Instructions
 

  • Preheat oven to 350 and prepare your pan with parchment and non stick
  • Mix together flour, salt, baking powder, poppy seeds, then add your milk, oil, eggs, sugar and extracts mix to combine gently fold do not whisk , pour into loaf pans and sprinkle the tops with the sliced almonds
  • bake for one hour or until a toothpick inserted in the center comes out clean
  • side note: I would divide this into 2 loaf pans, I noticed when I use one pan it takes very long to fully cook, therefore drying out the sides while the middle is barley cooked.
